Herbed Black-Eyed Pea Salad
Herbed Black-Eyed Pea Salad is an moderately easy dinner. Made with 3 c. fresh shelled black-eyed peas, 3 slices bacon, 1 large clove garlic, minced, 4 green onions, sliced and 1 sweet red or green pepper, minced, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.
Cook peas in boiling salted water 15 to 20 minutes or until peas are tender.
Drain and rinse under cold water until cool. Drain well; set aside.
Cook bacon in a large skillet until crisp. Remove bacon, reserving drippings in skillet.
Crumble bacon; set aside.
Add garlic to drippings in skillet; saute 1 minute.
Add green onions and red pepper; saute until tender.
Cool completely. Combine bacon, pepper mixture, peas, mayonnaise, vinegar, oregano and pepper; stir well.
Serve at room temperature.
