Hearty Vegetable Chowder
Hearty Vegetable Chowder is an moderately easy dinner. Made with 1 (10 3/4 oz.) can chicken broth (undiluted), 2/3 c. water, 4 c. frozen mixed vegetables, 1/4 c. minced onion and 1/4 c. minced green pepper, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.
Combine chicken broth and water in a saucepan.
Bring to a boil.
Add mixed vegetables.
Cook 15 minutes until tender. Saute onion and pepper in Dutch oven until tender.
Blend in flour, paprika and mustard.
Gradually add milk, vegetables and broth.
Cook over medium heat, stirring constantly, until mixture comes to a boil.
Remove from heat.
Add cheese and pepper.
Stir until cheese melts.
Yield: 7 cups.
