Health Club Tuna Salad
Health Club Tuna Salad is an moderately easy dinner. Made with 1 (16 oz.) can mixed fruit in juice, 1 1/2 tsp. curry powder, 6.5 oz. fresh tuna, cooked without fat, 1 c. cucumber, sliced and butter lettuce leaves, this recipe delivers authentic, satisfying flavors. Pour juice from fruit into measuring cup.
Mix in curry powder.
Add enough water to make 2 cups of liquid.
Bring to a boil.
Pour over cracked wheat in bowl; let stand 30 minutes while liquid soaks in and wheat cools.
Mix fruit, tuna, cucumber and green onion.
Chill.
Serve on lettuce.
