Ground Peanut Stew
Ground Peanut Stew is an moderately easy dinner. Made with 1 (2 1/2 lb.) fryer chicken, cut up, 3 tbsp. cooking oil, 1 lb. beef stew meat (cut up into 1-inch pieces), 2 medium onions, chopped and 1 medium green pepper, chopped, this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.

In a large saucepan brown chicken pieces in hot oil about 15 minutes; remove from pan.
Set aside, reserving drippings.
Add beef, onions and green pepper; cook until beef is brown and onions tender.
Drain and stir in undrained tomatoes, salt and pepper. Bring to boiling; reduce heat.
Cover and simmer 30 minutes.
Add chicken; simmer 20 minutes.
In small saucepan melt peanut butter over low heat.
Stir into chicken mixture.
Return mixture to boiling; reduce heat.
Cover and simmer 20 minutes more.
Skim off fat.
Serve with mashed sweet potatoes or hot cooked rice.
Makes 8 to 10 servings.
