Green Tomato Chutney
Green Tomato Chutney is an moderately easy dinner. Made with 5 lb. green tomatoes, 1/2 lb. sliced onions, 1 lb. dark brown sugar, 1 tbsp. ground cinnamon and 2 tsp. peppercorns, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Slice tomatoes thinly and place in bowl with salt between layers.
Leave overnight.
Next day, rinse, drain and put in large pot with all remaining ingredients.
Cook slowly, uncovered, until tomatoes are tender and vinegar is nearly absorbed.
This will take close to 5 hours.
Makes anywhere from 2 1/2 to 4 pints.
