Green Pepper Jelly
Green Pepper Jelly is an moderately easy dinner. Made with 6 large green peppers, 1 1/2 c. cider vinegar, 6 c. sugar, 1/2 tsp. salt and 1/2 tsp. cayenne, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.

Seed and chop peppers.
Put 1/2 of the peppers and 1/2 the vinegar into a blender and purée.
Repeat with remaining 1/2.
Put purée into a large pan with cayenne, sugar and salt.
Stir constantly as you bring it to a full boil.
Add pectin and boil 1 minute longer.
Remove from heat and add green coloring to achieve suitable color.
Pour into sterile jars and seal with paraffin. Makes 2 pints.
