Green Bean Beef Stew
Green Bean Beef Stew is an moderately easy dinner. Made with 2 lb. beef chuck, 1/3 c. flour seasoned with salt and pepper, 2 tbsp. beef drippings, 2 medium onions, sliced and 4 medium tomatoes, ripe, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.

Have the meat cut in 1-inch cubes; coated with seasoned flour. Heat the drippings in a heavy skillet or Dutch oven; add onions and cook until yellow; add the meat and brown on all sides; add the tomatoes, peeled and quartered, and boiling water.
Cover and simmer gently over low heat, about 1 1/2 hours.
Add beans and continue cooking until meat and beans are tender.
If desired you may remove meat and vegetables.
Thicken gravy and return meat and vegetables to gravy.
