Greek Beef Stew
Greek Beef Stew is an impressive dinner. Made with 1/2 stick sweet butter, 3 lb. beef chuck, cut up, 1 c. red wine (dry), 1 c. beef broth and 6 oz. can tomato paste, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.
Blanch onions in boiling water for 1 minute.
Drain; peel. In a kettle, melt butter over moderate heat.
Add the beef; toss to coat it with butter, but do not let it brown.
Add wine, stock, tomato paste, vinegar, sugar, cumin, garlic, allspice, bay leaf and salt and pepper to taste.
Bring mixture to a boil; simmer stew, covered, for 1 hour and 30 minutes.
Add onions.
Simmer, covered, for 30 minutes.
