Grandma Podewels' Icebox Cake
Grandma Podewels' Icebox Cake is an moderately easy dinner. Made with 1 (7 1/2 oz.) pkg. vanilla wafers, 1/2 c. soft oleo, 1 1/2 c. powdered sugar, 1 medium drained pineapple and 2 tsp. vanilla, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.
Layer crushed or whole vanilla wafers in bottom of an 8 x 5 x 3-inch loaf pan lined with foil (foil should be extended out over edge of pan for easy removal).
Cream oleo until fluffy.
Add eggs, one at a time, beating well after each.
Add vanilla and mix well. Combine pineapple and oleo mixture and layer alternately with vanilla wafers ending up with the wafers.
Press lightly with a spoon and chill in refrigerator 24 hours (or freeze).
Garnish with whipped cream and maraschino cherries.
Slice to serve.
Makes 10 to 12 servings.
