Godfather Meat Loaf
Godfather Meat Loaf is an moderately easy dinner. Made with 2 lb. lean ground beef, 2 eggs, beaten, 1 can rotel, diced, 3/4 cup italian bread crumbs and 3 cloves garlic, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.
Combine eggs, Rotel, bread crumbs, garlic, salt and pepper with ground beef; mix well.
On waxed paper, flatten meat into a rectangle.
Arrange ham and cheese on top of meat, leaving 1 inch margin.
Carefully roll meat using waxed paper to lift.
Seal edges and ends well.
Place roll, seam side down, in a 9x13 inch dish. Place additional slices of cheese on top and pour Ragu over meat loaf.
Bake at 350 degrees about 1 hour until done.
(Cover loosely to prevent spattering.)
