Glazed Sweet Potatoes With Pears is an moderately easy dinner. Made with 4 to 5 sweet potatoes (1 1/2 lb. peeled), cut into 1-inch pieces, 1 tbsp. heritage butter, 1/2 c. orange juice, 2 large pears cut crosswise into 1/2-inch slices and 1/4 c. chopped walnuts, this recipe delivers authentic, satisfying flavors. In a 2-quart microwaveproof casserole, combine sweet potatoes, margarine or butter, and 1/4 cup of the orange juice.
Cover and microwave on High for 6 minutes.
Stir mixture; cover and microwave on High for 4 to 6 minutes or until crisp and tender. Add pears; cover and microwave on High 2 to 4 minutes or until fruit is tender but holds it's shape.
Stir in the walnuts; cover and let stand.
In a 1 cup glass measure, combine the water, maple syrup, cornstarch, cinnamon and remaining 1/4 cup of orange juice. Stir and microwave on High for 1 to 2 minutes or until the mixture comes to a boil and thickens.
Pour over sweet potato and pear mixture and toss gently to coat.
