Ginger's Onion and Potato Soup
Ginger'S Onion And Potato Soup is an moderately easy dinner. Made with potatoes, 1 to 2 sticks butter or margarine, 2 c. milk, 3 large sweet onions and 8 oz. sour cream, this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.

Peel and chop approximately 12 potatoes.
Put them in a large pot with enough water to barely cover them.
Slice onions in large sections no smaller than quarters.
Put them on top of the potatoes.
Do not add water to the pot.
Bring to a boil.
Add 2 teaspoons salt and pepper, 1 teaspoon of chopped red pepper and 1 teaspoon of garlic powder.
Once the onions are cooked until they are clear, smash the potatoes.
Reduce to low heat.
Do not drain the water.
Add butter, 1 to 2 cups milk and 4 to 8 ounces sour cream.
Top with shredded cheese.
Serve.
