German Pickled Mushrooms(Eingelegte Champignons) is an moderately easy dinner. Made with 1 lb. small button mushrooms, 1 tbsp. salt, 1 medium onion, finely chopped, 1 clove garlic, crushed and 1/4 c. chopped fresh parsley, this recipe delivers authentic, satisfying flavors. Bursting with flavor in every bite.

Wash mushrooms thoroughly in cold water containing 1 tablespoon salt; drain.
Mix all other ingredients; pour over the mushrooms in an enameled saucepan.
Bring to a boil, then simmer for 6 to 8 minutes or until tender.
Let cool.
Keep covered in a refrigerator until required.
This is one of my favorite first courses.
