Garden Fresh Soup
Garden Fresh Soup is an moderately easy dinner. Made with 1/4 c. olive oil, 2 onions, thinly sliced, 2 cloves garlic, finely chopped, 2 medium size zucchini, sliced and salt and pepper to taste, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.
Heat oil in heavy kettle.
Saute onions and garlic until transparent; add zucchini and green pepper.
Cook over medium heat, stirring often, until lightly browned (around 10 minutes). Add the remaining ingredients, except macaroni; bring to boil. Cover and simmer for 10 minutes or until vegetables are barely tender.
Add macaroni and simmer for 4 minutes longer.
Serves 6.
