Funnel Cakes
Funnel Cakes is an moderately easy dinner. Made with vegetable oil for frying, 2 c. unsifted plain flour, 1 tbsp. sugar, 1 tsp. baking powder and 1/4 tsp. salt, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Combine dry ingredients and sift together in large bowl.
Make a well in center.
Pour in mixture of eggs and milk.
With a large spoon, mix until batter is smooth.
Pour 1 to 1 1/2-inches of oil into heavy 12-inch skillet.
Heat until hot, but not smoking. Place 1/3 cup batter into a funnel, placing finger over tip until ready to dribble.
Dribble batter into hot oil, slowly moving the funnel in a circle.
This will build a snail-like coil of 3 to 4 rings, about 6-inches across.
Fry about 2 minutes on each side, turning only once.
