Ful Medames
Ful medames is a hearty Egyptian bowl of slow-stewed fava beans brightened with lemon, garlic, cumin, olive oil, tomato, onion, and parsley. It is simple, filling, and best served warm with soft bread for scooping every seasoned bite.
π Recipe adapted from Wikidata (Dish)
Warm the fava beans with a splash of their cooking liquid until soft and creamy, lightly mashing some beans against the side of the pan.
Stir in garlic, cumin, lemon juice, salt, pepper, and half of the olive oil; simmer briefly so the seasonings bloom into the beans.
Spoon the beans into shallow bowls and top with tomato, red onion, parsley, and the remaining olive oil.
Serve warm with lemon wedges and pita, adjusting salt and lemon at the table.
