Frittata
Frittata is an impressive dinner. Made with 2 italian sausages, 1/4 c. olive oil, 1 medium onion, chopped, 1/2 lb. mushrooms, sliced and 1 (10 oz.) frozen spinach, chopped and drained, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.

Remove casings from sausage and brown in olive oil in skillet. Break up sausage.
Drain and reserve.
Saute onions and mushrooms.
Add drained, chopped spinach and saute 1 minute more. Remove and combine with sausage.
Butter 9-inch square pan. Combine next 6 ingredients.
Mix well with vegetable sausage mixture.
Pour into pan and top with remaining cheeses.
Bake in a preheated oven at 350Β° for 20 to 25 minutes.
Cool and cut into squares.
