Fresh Strawberry Pie
Fresh Strawberry Pie is an moderately easy dinner. Made with 1 baked pie shell (9-inch size), 1 qt. fresh strawberries, 2 tbsp. cornstarch, 1 (3 oz.) pkg. cream cheese and 3/4 c. sugar, this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.
Mix cream cheese with a small amount of milk to soften; spread over bottom of crust.
Put half of the berries on top of cheese covered crust.
Mash rest of berries and bring to boiling point. Mix sugar and cornstarch together; add to mashed berries.
Cook 10 minutes, stirring occasionally, until cornstarch is smooth.
Cool and pour over fresh berries in pie shell.
Place in refrigerator until very cold.
Cover with slightly sweetened whipped cream before serving.
Save a few big berries for the top of each slice of pie.
Local berries are essential for this pie.
California ones just won't work.
