Fresh Broccoli Soup
Fresh Broccoli Soup is an moderately easy dinner. Made with 1/2 lb. fresh broccoli (1 bunch), chopped, 1/4 c. chopped onion, 1/4 c. butter or margarine, 1/2 c. all-purpose flour and 3 c. water, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.
Cook broccoli, covered in small amount of boiling water, until tender, 10 to 15 minutes.
Drain and chop coarsely.
In large saucepan, saute onion in butter until tender, but not brown. Blend in flour; add water, milk and Worcestershire sauce.
Cook and stir until mixture thickens slightly.
Add chopped broccoli. Bring to boiling and stir in cheese until melted.
Makes 8 servings.
