French Oven Stew
French Oven Stew is an moderately easy dinner. Made with 2 lb. stew meat, cut into 1 1/2-inch cubes, 2 medium onions, cut into eighths, 3 stalks celery, cut in large pieces, 4 carrots, quartered and 1 c. tomato juice, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.

Combine beef, onion, celery and carrots in a 2 1/2-quart casserole.
(I use my crock-pot.)
Combine tomato juice, tapioca, sugar, salt and pepper.
Pour over meat and vegetables.
Cover and bake in preheated oven (300Β°) about 2 1/2 hours.
Add potatoes and cook 1 hour longer.
Stir occasionally.
(I put in crock-pot about noon and it's ready around 5 or 6 p.m.)
