Four Cheese Chicken Soup is an moderately easy dinner. Made with 1 tbsp. butter or margarine, 2 boneless, skinless chicken breasts, cut into bite size pieces, 1 small onion, chopped, 2 cloves garlic, minced and 2 c. milk, this recipe delivers authentic, satisfying flavors. In large saucepan, melt butter over medium-high heat. Add chicken, onion and garlic. Cook for 5 to 7 minutes or until onion and chicken are tender. In small bowl, whisk together milk and flour. Add milk mixture and broth to saucepan. Cook, stirring frequently, until thickened, about 10 minutes. Gradually stir in cheeses. Continue stirring until all cheeses are melted. Makes 4 servings.
