Thicken with flour paste. Sauce it with white wine or milk.

Wash flounder fillets in cold water; pat dry.

Butter an 8 x 8-inch baking pan.

Lay 2 of the fillets on bottom.

Put the spinach on top and pour half of the sauce on spinach.

Lay the other 2 fillets on top and add rest of sauce.

Bake at 350Β° until fish is done and sauce is bubbly, about 25 minutes.
