Florentine Quiche
Florentine Quiche is an moderately easy dinner. Made with 5 eggs, 1/4 c. milk (half and half), 6 oz. mixed shredded colby and monterey jack cheese, 1/2 c. well drained (1/2) frozen spinach and 1 c. chopped onion, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Saute onion until soft in 1/2 stick butter or oleo.
Beat eggs with salt and pepper.
Add milk, shredded cheese, spinach and cooled sauteed onion.
Mix well and pour into unbaked pie shell. Bake at 375Β° until crust is brown and quiche is set well in the center.
Let stand at least 10 minutes before serving.
Good with picante.
