Finnish Chestnut Fingers
Finnish Chestnut Fingers is an moderately easy dinner. Made with 6 tbsp. butter or margarine, 1/4 c. sugar, 1 egg yolk, 1/2 c. chestnut purée or canned chestnuts, drained and pureed and 1/4 tsp. vanilla, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.

Cream butter or margarine and the 1/4 cup sugar thoroughly. Add egg yolk; beat until light and fluffy.
Beat in chestnut purée and vanilla.
Stir flour, salt and cinnamon together thoroughly; stir into creamed mixture.
Roll into 2 1/2-inch long fingers, using a scant tablespoon dough for each finger.
Dip one side of each finger in slightly beaten egg white, then in sugar.
Place, sugar side up, on greased cookie sheet.
Bake at 350° until lightly browned, about 20 minutes.
Remove from cookie sheet while hot.
Cool on wire rack.
Dip one end of each cookie in melted chocolate.
Place on waxed paper until chocolate hardens.
Makes 30 cookies.
