Fattoush
Fattoush is an moderately easy dinner. Made with 3 medium tomatoes, cut in wedges, 3 pita breads, 4 c. romaine lettuce, cut into 1-inch strips, 2 c. sliced cucumber and 1/2 c. crumbled feta cheese, this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.

Cut pita breads into halves.
Cut each half into 8 wedges. Place on a shallow baking pan.
Bake until crisp, turning occasionally, about 25 minutes.
Remove from pan and cool.
In a large bowl, combine lettuce, cucumber, Feta cheese, onion, tomatoes and pita wedges.
Mix vinaigrette dressing, parsley and mint.
Pour over salad mixture and toss.
Serves 4 to 6.
