Mix; let stand at least 3 hours at room temperature.
Line jelly roll pan with layers of brown paper bags and top with paper towels.
Cut sweet onions (Vidalia best) into 1/4-inch thick rings.
Heat oil or solid Crisco to 375° (about 2-inches deep in deep pan).
Dip rings in batter and fry to golden brown. (Chopsticks work great for turning and removing from hot oil.) Place on lined pan and place in middle rack in a 200° oven.
Will stay crisp at least 2 hours.
