Emerald Chicken(China)
Emerald Chicken(China) is an impressive dinner. Made with 1 lb. boneless skinless chicken breast, 1 tbsp. finely chopped fresh ginger, 1 onion sliced, 1 green pepper seeded and diced and 1/2 lb. broccoli cut into chunks, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.

Cut chicken into chunks.
Heat 2 tablespoons of oil in a wok. Add chicken to the wok with ginger.
Stir and cook.
Stir in the onion and cook for a couple of minutes.
Add the remaining vegetables and cook for a few minutes.
Season with salt and pepper to taste.
Add the chicken broth, soy sauce, and rice wine. Cover and cook until the liquid boils.
Cook for 2 more minutes. Lower the heat and cook for 2-3 more minutes.
Mix the cornstarch with water and stir until smooth.
Increase the heat mix the vegetables and cook until it thickens.
Sprinkle with sesame seeds if desired.
