Eggplant Parmesan
Eggplant Parmesan is an easy dinner. Made with 1 (2 lb.) can whole italian tomatoes, 1 large size can tomato sauce (delmonte or hunts), 2 cloves garlic and 4 tbsp. olive oil (can be mixed with vegetable oil if lighter oil is desired), this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.

Beat tomatoes in blender for a few minutes.
Season with the following spices to taste: salt, pepper, parsley, fresh basil (chopped) and oregano.
In a heavy pot, brown garlic in oil; remove.
Add tomatoes, sauce and spices.
Simmer about 1 1/2 hours.
Skim oil from top of sauce.
