Eggplant Parmesan
Eggplant Parmesan is an moderately easy dinner. Made with 2 medium eggplant, 1 1/2 c. cornbread crumbs, 2 eggs, beaten, 1 onion, chopped and 2 small cans tomato sauce, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Cook ground beef, onion, bell pepper, garlic and salt.
Set aside.
Wash and peel eggplant; slice into rounds.
Dip into beaten egg and roll in crumbs.
Melt butter, 1/4 stick at a time, in a skillet and brown eggplant on both sides.
Put eggplant in casserole dish, add a layer of meat mixture, cover with tomato sauce and top with cheese.
Bake at 350Β° for about 30 minutes or until bubbly.
