Eggplant Parmesan
Eggplant Parmesan is an easy dinner. Made with 1 large eggplant, 1 pkg. mozzarella cheese, 1 c. parmesan cheese, 1 can tomato sauce and italian seasoning, this recipe delivers authentic, satisfying flavors. Packed with nutrients and delicious flavors.

Skin eggplant (tricky).
Slice in long 1/2-inch pieces lengthwise.
Soak in salt water for 30 minutes.
While soaking, simmer tomato sauce with Italian seasoning.
In shallow baking dish, layer eggplant, tomato sauce, Parmesan cheese and sliced Mozzarella cheese.
Repeat.
Bake at 350Β° for 30 minutes to 1 hour. Cut in squares and serve plain or over bed of linguini.
