Eggplant Casserole
Eggplant Casserole is an moderately easy dinner. Made with 1 medium eggplant, peeled and cubed, 1 lb. ground beef, 2 c. cooked rice, 9 1/2 slices bread, made in crumbs plus 1 tsp. butter and pepper and salt to taste, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.
Cook eggplant in a little salty water; drain and mash.
Cook hamburger and onion until done.
Mash meat to keep it from lumping, them drain and add pepper.
Crumble rice in eggplant, then add beaten egg.
Mix well.
Pour in dish and top with buttered crumbs.
Bake at 350Β° until brown.
