Eggplant Casserole
Eggplant Casserole is an moderately easy dinner. Made with 1/2 loaf bread, cubed, romano cheese, grated, parsley, salt, pepper and garlic, eggplant and mozzarella or swiss cheese, this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.

Soak sliced eggplant in water (removes bitterness); saute in oil.
Mix bread, Romano cheese, parsley, salt, pepper and garlic in bowl.
In casserole, add layer of eggplant slices, mixed bread cubes, Mozzarella cheese and tomato sauce.
Repeat layers.
Bake at 350Β° for approximately 30 to 45 minutes.
