Eggplant Casserole
Eggplant Casserole is an moderately easy dinner. Made with 1 medium eggplant, peeled and sliced, 1 tsp. salt, 1 stick margarine, melted, 1 1/2 c. milk and 4 eggs, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.

Cook eggplant until mushy and drain.
Add all ingredients except 1/2 cup of cheese and 1/2 cup of cracker crumbs and small amount of melted margarine.
Mix well, pour into baking dish. Sprinkle with reserved cheese, crumbs and margarine.
Bake at 350Β° for 25 to 30 minutes.
Yields 6 to 8 servings.
