Eggplant Casserole
Eggplant Casserole is an moderately easy dinner. Made with 5 to 6 slices bread, toasted and cut into small pieces, 1 medium eggplant, cubed and parboiled, 1 lb. hot sausage, cooked and drained, 1/2 c. diced celery and 1/2 c. diced pepper, this recipe delivers authentic, satisfying flavors. Grease 2-quart baking dish; cover bottom with bread pieces. Top with eggplant, celery, pepper and onions, sausage and tomatoes.
Cover and bake at 350Β° for 45 minutes.
Add remaining bread crumbs and cheese.
Return to oven 3 or 4 minutes until cheese melts.
