Eggplant Casserole
Eggplant Casserole is an moderately easy dinner. Made with 2 medium eggplants, peeled and chopped, 4 tomatoes, chopped, 2 green peppers, thinly sliced, 2 onions, sliced into rings and 1/2 tsp. salt, this recipe delivers authentic, satisfying flavors. Layer half the eggplant, tomatoes, peppers, onions, salt, pepper, oil, and all the bread crumbs in a greased shallow 2 quart baking dish.
Repeat layers with remaining ingredients. Sprinkle with tapioca.
Bake at 350Β° covered with foil for 1 hour. Top with cheese.
Bake again until cheese melts.
