Eggplant Casserole
Eggplant Casserole is an moderately easy dinner. Made with 1 medium eggplant, peeled and sliced, 1 c. grated sharp cheese, 1 c. cracker crumbs (saltines), 1 c. milk and 3 eggs, this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.

Cook eggplant until mushy and drain.
Add 1/2 of margarine, while hot.
Add all ingredients, reserving 1/4 cup cheese and 1/4 crumbs; mix well. Pour into baking dish.
Sprinkle with reserved cheese, cracker crumbs and margarine. Bake 30 minutes in 350Β° oven.
Makes 6 servings.
Tastes like scalloped oysters.
