Cook eggplant until tender in salted water.
Drain real good and dump in bowl.
Salt and pepper.
Beat egg and put in 1 tablespoon butter, crushed crackers, milk and 1 cup grated cheese.
Mix all together.

Bake at 350Β° until it bubbles (30 minutes to 1 hour).
