Egg Biryani
Egg biryani layers saffron rice, masala, boiled eggs, fried onions, mint, and whole spices into a fragrant pot. Each serving has fluffy grains and rich spiced eggs.

Parboil soaked basmati rice with whole spices until the grains are partly tender.
Fry onions until golden and reserve some for garnish.
Cook yogurt, ginger-garlic paste, biryani masala, and halved eggs into a thick masala.
Layer rice, egg masala, mint, cilantro, saffron milk, and ghee in a heavy pot.
Steam covered until the rice is fluffy, then top with fried onions and serve with raita.
