Duxelles
Duxelles is a finely chopped mushroom preparation cooked down with shallots, herbs, butter, and wine until savory, dark, and spreadable for pastry, toast, or sauces

Chop mushrooms very finely so they cook into an even mince.
Sweat shallots in butter until translucent, then add mushrooms and salt.
Cook slowly until the mushrooms release moisture and the pan turns nearly dry.
Deglaze with wine and continue cooking until glossy and concentrated.
Finish with thyme, parsley, pepper, and a few drops of lemon juice.
