Dutch Potato Salad
Dutch Potato Salad is an moderately easy dinner. Made with 2 1/2 lb. red potatoes (8 medium), 4 oz. sliced bacon, crisp cooked, drained and crumbled (5 slices), 6 oz. gouda cheese, julienne cut into 1-inch sticks, 1/2 c. mayo or salad dressing and 1/2 c. light cream, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.

Cook potatoes in boiling water for 20 to 25 minutes or until tender; drain.
Peel and cut potatoes into 1/2-inch cubes.
In a large bowl, combine potatoes, bacon, cheese and onions.
Combine mayonnaise, cream, mustard and pepper.
Add to potatoes.
Toss to coat.
Cover and chill for 6 to 24 hours.
Makes at least 12 side dish servings.
