Dried Apple Cake
Dried Apple Cake is an moderately easy dinner. Made with 1 c. shortening, 2 c. sugar, 2 eggs, 4 c. flour (plain) and 1 tsp. baking soda, this recipe delivers authentic, satisfying flavors. Bursting with flavor in every bite.
Cream together shortening and sugar (adding sugar slowly) and beat until smooth.
Add 1 egg at a time to mixture and beat until fluffy.
Sift together flour, baking soda, salt, baking powder and nutmeg and add to creamed mixture together with buttermilk; mix well.
Divide into 8 equal portions; bake 2 to 3 portions at a time in greased 8 to 9-inch cake pans for 12 minutes at 325Β°. Stack cake layers while they are hot; let cool.
Stew apples, being careful not to get them too dry; remove from heat and add 1/2 cup sugar and 1 teaspoon vanilla; mash apples thoroughly to the consistency of creamed potatoes.
Let cool before icing cake.
