Dirty Rice
Dirty Rice is an impressive dinner. Made with 2 tbsp. flour, 2 tbsp. vegetable oil, 1 c. chopped onion, 1 c. chopped celery and 1/2 c. green peppers, chopped, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Brown flour in oil until it is a deep red-brown, stirring constantly to prevent burning.
Add onion, celery, green peppers and garlic.
Cook until vegetables are tender.
Stir in beef, pork, giblets and seasonings.
Continue cooking until meat loses its red color.
Blend in broth, cover and simmer 25 minutes.
Stir in rice and onion tops.
Cook 5 minutes longer.
Mixture should be slightly moist.
Serves 6.
