Diabetic Oatmeal Cookies
Diabetic Oatmeal Cookies is an impressive dinner. Made with 1 c. raisins, 1 c. water, 1 c. shortening, 1/4 c. brown sugar and 1 1/2 tsp. liquid sweetener, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.
Cook raisins in water for 3 minutes; do not drain.
Cream together the shortening, sugar, liquid sweetener, eggs and vanilla.
Sift flour with soda, salt, nutmeg and cinnamon and blend into creamed mixture.
Stir in oatmeal and nuts.
Drop by spoonfuls on slightly greased baking sheet.
Bake at 350Β° for 10 to 15 minutes until light brown.
Makes 3 to 4 dozen.
