Delia's Manhattan Clam Chowder
Delia'S Manhattan Clam Chowder is an moderately easy dinner. Made with 3 c. clams (3 doz. large cherrystone clams and juice or about 1 1/2 lb. chopped, frozen clams, 5 c. clam juice (if using bottled clam juice, use 2 to 3 bottles juice and enough water to make the 5 c.), 1 c. chopped onion, 3/4 c. chopped carrots and 1 c. diced celery, this recipe delivers authentic, satisfying flavors. Braise onion in butter.
Add celery, carrots, potatoes and a little water; cook 10 minutes.
Add tomatoes, thyme, pepper, clam juice and clams.
Cook 20 minutes.
