Curried Rice
Curried Rice is an moderately easy dinner. Made with 1 c. rice, 1/4 c. butter or oil, 1/2 c. finely chopped onion, 1/4 c. finely chopped celery and 2 tbsp. parsley, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.

Rinse and dry rice.
Melt butter in skillet.
Add rice and cook, stirring, until lightly brown, about 10 minutes.
Add onion, celery and parsley and continue until vegetables are soft.
Add chicken broth, water and seasonings.
Cover and simmer over low heat about 20 minutes or until rice is tender.
Makes about 6 servings.
