Curried Egg Mold
Curried Egg Mold is an moderately easy dinner. Made with 1 small onion, finely chopped, 1 rib celery, finely chopped, 2 tbsp. butter, 2 tsp. curry powder and 1 envelope gelatin, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.
Saute onion and celery in butter until tender.
Sprinkle in curry powder; cook about 1 minute.
Soak gelatin in 1/4 cup chicken broth; add to remainder of broth (which you have heated in a microwave) to dissolve the gelatin.
Set aside about 1/4 cup to decorate the mold.
Stir into curry mixture and bring to a boil, stirring constantly.
As this is starting to thicken, add the remainder of the ingredients, plus a drop of yellow food coloring.
To decorate the top of the mold, pour in some of the reserved gelatin broth mixture.
When it is almost set, arrange sliced black olives on top.
When firm, add the remainder of the mixture and refrigerate until firm.
