Cucumber Soup
Cucumber Soup is an moderately easy dinner. Made with 2 cucumbers, 1 cube butter, 1/4 c. flour, 2 c. chicken stock and 1/2 tsp. salt, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Peel and remove seeds from cucumbers.
Place in boiling salted water to cover.
Simmer for 5 minutes; drain and chop.
Melt butter in saucepan.
Add flour and stir.
Add stock; bring to a boil.
Add cucumbers, salt and pepper; simmer until cucumbers are tender.
Mix in blender and reheat to serve.
