Cucumber Pickles
Cucumber Pickles is an moderately easy dinner. Made with 6 qt. sliced cucumbers, 1/8-inch thick, 1 qt. thinly sliced onions, 1 c. salt, 2 qt. cold water and 4 trays ice cubes, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.
Soak cucumbers and onions in salt, 2 quarts water and ice cubes for 3 hours.
Drain well. Thoroughly mix turmeric, celery seed, mustard seed, sugar, 1 cup water and vinegar; heat to boiling.
Add drained vegetables and bring to full rolling boil. Quickly fill hot sterilized jars making sure vinegar solution covers vegetables and seal each jar at once.
Makes 10 pints.
