Crustless Zucchini Quiche
Crustless Zucchini Quiche is an moderately easy dinner. Made with 1 tsp. butter, 2 c. sliced zucchini, 1 small onion, chopped, 2 tsp. butter and 15 oz. part skim milk ricotta cheese, this recipe delivers authentic, satisfying flavors. Perfect for family dinners and special occasions.
Preheat oven to 350Β°.
Grease 9-inch quiche pan with 1 teaspoon butter. Steam zucchini until very soft (about 10 minutes).
Saute onion in 2 teaspoons butter until transparent. When cool, mix with Ricotta cheese, Cheddar cheese, milk, eggs, salt and pepper.
Fold in zucchini and pour into quiche pan.
Bake for about one hour, or until quiche is golden and firm to the touch.
Yields six servings.
