Crunchy Banana Bread
Crunchy Banana Bread is an impressive dinner. Made with 1 1/4 c. all-purpose flour, 1/3 c. wheat germ, 1 tsp. salt, 2 eggs and 1 c. mayonnaise, this recipe delivers authentic, satisfying flavors. Perfect for family dinners and special occasions.
Grease two 8 x 4-inch loaf pans.
Preheat oven to 325Β°. Combine flours, wheat germ, baking powder, salt and nutmeg.
In large mixer bowl, with electric mixer on medium, beat eggs with sugar until light and thick.
Beat in mayonnaise.
Alternately beat milk and banana with flour mixture into egg mixture just until moistened.
Fold in 3/4 cup of the coconut and fruit bits.
Pour into loaf pans.
Sprinkle each with 1/4 cup of the remaining coconut.
Bake 1 1/2 hours or until cake tester inserted in center comes out clean.
Cool completely on wire rack after letting cool in pan 10 minutes.
